At Seoryun Charcoal, the grill isn’t hidden in the kitchen.It lives at the centre of the table, where conversation slows, laughter rises, and every moment is seasoned by smoke and heat.

The Fire

We cook exclusively over natural charcoal, not gas. The difference is immediate — deeper caramelisation, cleaner smoke, and a gentle char that enhances rather than overwhelms the meat.


You hear it before you taste it. The sizzle. The hiss of rendered fat meeting flame.



The Meat


Our cuts are selected for balance: richness without heaviness, tenderness without excess.

  • Thick-cut pork belly (sam-gyeop-sal), seared until crisp at the edges and buttery within

  • Marinated short rib, sweet, savoury, and deeply caramelised

  • Thin-sliced beef, grilled quickly to preserve juiciness and depth

Every cut is designed to be eaten hot, moments after touching the grill — because timing is everything.
